It’s been 5 years since I got my green card, and I’d like to apply for citizenship right away. However, I also spent 2 of those 5 years living in Korea — I’d like to know if that time still counts toward my citizenship application eligibility.

The residency requirement for a citizenship application is a total of 2.5 years out of the 5 years as a green card holder. So you are eligible to apply. Time spent living outside the U.S. isn’t counted toward the U.S. residency period, but as long as you’ve accumulated 2.5 years as a green card holder within the U.S., you remain eligible to apply for citizenship — please keep this in mind.
