My spouse and I have each received employment-based green card sponsorship offers through different companies.
I’d like to know if we can both proceed with two separate green card processes at the same time. I’d also like to know the pros and cons of doing so.

Yes, you can each proceed with employment-based immigration separately. You can file I-140 separately for each, and then at the I-485 stage, you have the option of choosing whether to consolidate under one or file both. One might not succeed at the PERM stage, or there could be an issue with I-140, so this is fine as a strategy. However, a downside is that this could mean double the cost (though of course, this is typically paid by the company).
