I stopped working at my sponsoring company, but I’m having trouble calculating the exact date I left.
I’d like to know whether the relevant date is the day the employer notified USCIS, or the actual date I stopped working.

So regardless of when the sponsor notified USCIS of the termination, you fall out of status from the actual date you stopped working, and if more than 180 days pass, you would not be allowed to re-enter after leaving. If you leave before the 180-day mark, entering with a new visa is still possible, so please keep this in mind. If you don’t leave and instead try to change to a different status after leaving your job, you generally need to file within about 2 weeks for there to be a reasonable chance — and switching from H-1B (work) status to F-1 (student) status should be considered roughly a 30% chance of success.
