When I travel to Korea while holding an E-2 visa and come back, I get stamped with another 2 years — I’d like to know if that means my visa is automatically extended.

Granting another 2-year stay period when you travel to Korea and return with your E-2 visa does not mean the E-2 visa itself is extended. It’s simply an extension of your period of stay — you still ultimately need to file a separate E-2 visa renewal, either in Korea or the U.S., for the visa itself to be considered renewed. Since your I-94 stay period remains valid, your E-2 status is considered extended, but if you leave the country again, you’ll need to obtain a fresh E-2 visa to re-enter.
