My I-485 was denied — question about appealing

At the final I-485 stage, USCIS reviews whether the applicant has ever violated immigration law. There are provisions that can excuse a past record of unlawful employment if it’s under roughly 180 days. If it seems the denial happened because this excusing provision wasn’t submitted from the start at the RFE (Request for Evidence) stage, you should consider filing a motion to reconsider.
